Peter is a successful restaurant and bar owner, as well as a hospitality expert with experience across luxury and boutique hotels, and corporate and entrepreneurial environments. He formerly worked for Ian Schrager Hotels as Vice President of Bars overseeing an international beverage portfolio without equal.
Prior to that he worked in restaurant management for Four Seasons Hotels, Bice, Coco Pazzo, Campagne and Aquavit before founding bpc (by peter chase), a company whose primary interests are developing and managing creative hospitality concepts. To date, select developments and clients include the overnight sensation Skybar Miami Beach, the nightlife altering Wunderbar at the W Montreal, as well as, MGM Grand Casinos (MGM, Mandalay Bay, Luxor, Borgata) in Las Vegas, Detroit and Atlantic City, Caesars Palace, Planet Hollywood, Garden of Ono, and the W San Diego.
Most recently, Peter, together with his partners in Collective Hospitality, conceptualized and opened Millesime at the Carlton hotel in New York City to rave reviews.
He is currently working on the creation of a new lounge concept for the W Downtown while curating future food and beverage offerings for the iconic Fairmont Queen Elizabeth hotel in Montreal.
Mr. Chase holds a Bachelor of Science degree from Cornell University’s School of Hotel Administration where he concentrated in independent restaurant operations and development.
